Keeping the kids entertained during the summer holidays is no mean feat, so if you’re searching for something to keep them occupied, especially on those rainy days, look no further. This whipped Tunworth is the perfect recipe to do just that and also get them into the kitchen, it also makes a lovely lunch or afternoon snack. Fresh peas are in season in the UK right now and if you’ve only ever used the frozen variety, fresh peas are really worth a try. Great for getting all the family around the table podding the peas, even if most end up being eaten straight from the pods!
Ingredients:
Tunworth
2 tbsp milk
2 tbsp cream
100g fresh peas
A few mint leaves
A few parsley leaves
Lemon
2 tsp olive oil
Method:
To make the whipped Tunworth, remove the rind from your cheese and cut or tear into pieces. Pop into a food processor and add the cream and milk. Blitz until smooth.
For the pea salsa, pod the peas until you have around 100g. You can use frozen peas if you prefer but the fresh variety are in season now and are tasting delicious.
Bring a pan of slightly salted water to the boil and prepare a bowl with ice water. Blanch your peas for 2 minutes and plunge straight into the ice water.
To make your salsa, combine the peas with a handful of finely chopped parsley and mint leaves, the zest and juice of half a lemon, olive and salt and pepper to taste.
Serve your whipped Tunworth topped with the pea salsa alongside some crusty bread or breadsticks.
